creamy chicken and rice soupI loved this recipe after giving birth to my third son.  I read somewhere that chicken soup was a good post delivery meal.

This thick soup really hit the spot and was a great comfort food.

GLUTEN & DAIRY FREE CREAMY CHICKEN & WILD RICE – This is also a great way to use up left over turkey after Thanksgiving. – olive oil, Onion (Diced), Cooked Chicken (or Turkey) (Shredded or Diced into 1/2 in cubes), Chicken Broth, uncooked Wild Rice, Carrots (Sliced), Water, garlic (Minced), Dried Thyme, Black Pepper, Bag of Frozen Peas, Butter (or Butter Substitute), White Rice Flour, Milk (or milk alternative, I used Almond Milk), Dry White Wine, Pour a bit of olive oil in the bottom of large pot (about 3 Tbsp). Add diced onion and cook until translucent.; Add chicken, broth, wild rice, carrots, water, garlic, thyme & pepper. Bring to boil. Reduce heat and simmer for 1 hour or until the rice is tender.; In a medium saucepan, melt butter substitute and then stir in the rice flour. Once the mixture is bubbly (2-3 min), slowly stir in the almond milk (or other milk substitute). Cook until thickened and bubbly. Slowly add this mixture to the chicken/wild rice mixture. Add peas and white wine. Add water if necessary to desired thickness. Heat through and serve.; –
