Vegan Gluten Free Lemon Bars!

lemon barsI LOVE these lemon bars.  They are my favorite of all lemon bars!

Vegan Gluten Free Lemon Bars! – Awesome Gluten Free Vegan Lemon Bars – Crust: Gluten Free Mama Coconut Blend Flour, Coconut Oil, Powdered Sugar (Gluten Free), Filling: Sugar, Lemons (Zested), Lemon Juice, Salt, Unsweetened Applesauce, Baking Powder, Topping: Powdered Sugar (or your desired amount…), Set oven to 350 degrees. Combine flour and powdered sugar in a medium sized bowl. Add coconut oil and mix until it becomes a well mixed course texture.; The dough will be very soft and sticky. Press mixture into 9 x 13 pan leaving a 1/2 inch raised rim along the sides. I generally dump the mix into the 9 x 13 pan, spreading it out fairly evenly. Then I quickly work the dough into the desired shape with my hands. Once the crust is ready, bake for 20 min, till the crust is set but not brown. It will be a very pale golden color.; Mix topping by combining sugar, lemon zest, lemon juice and salt in a bowl (I just reuse the crust bowl). I highly recommend using fresh lemons and a lemon zester. Lemon zesters are awesome. My sister-in-law and I once made a ginormous batch (4 gallons!!!) of peach marmalade (by accident. I have no idea how I miss read the recipe to do that, but it turned out great! We gave EVERYONE we knew peach marmalade for Christmas that year) and having a real zester can make all the difference in how many finger bits end up in your “zest.” If you are using fresh lemons check out my recipe for lemonade :); In a separate bowl, combine applesauce and baking powder till well blended (it will be rather frothy); When the crust is done, mix the applesauce with the sugar mixture and then pour over the crust. Bake for 50 minutes or until the center is slightly firm to the touch. Allow bars to cool and then dust with powdered sugar.; –
