Vegan Gluten Free Plum Cobbler

IMG_20150412_102334_rewind Everyone in my family loved this cobbler.  I made this with plums I had canned in an extra light syrup.  However, I also included

instructions for how to make the cobbler with fresh plums.

Vegan Gluten Free Plum Cobbler – Quick and easy vegan gluten free plum cobbler using home canned plums or fresh plums. – Filling: Home Canned Plums, Cinnamon, Dried Orange Peel, Tapioca Flour, Make Your Own Plums: Fresh Plums, Sugar, Cobbler Mix: Gluten Free Flour (I used Gluten Free Mama’s Almond Blend), Sugar, Baking Powder, Salt, Coconut Oil, Almond Milk (or other alternative milk), Lemon Juice, Prep: Pre heat oven to 350 degrees. Oil the sides of a 9" round baking dish (I used a 6" round casserole dish so I would have more cobbler coverage).; Plum Mix: Drain canned plums. Mix plums, cinnamon, orange peel and tapioca flour. Pour filling into oiled baking dish.; Make Your Own Plums: Slice plums in halves or quarters (depending on what you like). Add sugar. Mix into plum mix in place of canned plums. Using fresh plums with result in a more textured filling. The canned filling will be much softer.; Cobbler Mix: Combine almond milk with lemon juice in separate bowl. Whisk together gluten free flour, sugar, baking powder and salt. Blend in coconut oil until mixture is crumbly. Mix in almond milk/lemon juice until well combined (it will be a bit runny).; Bake: Pour cobbler mix over filling. Bake for 40 minutes until cobbler is lightly browned and filling is bubbling.; –
